2. Honey Taffy (Alvakhazi)
"Another traditional New Year's treat."
Makes about 2 dozen pieces of candy.
Ingredient:
2 cups honey
In a deep saucepan cook the honey over medium heat for 20 to 25 minutes until it reaches the soft crack stage (264 degrees on a candy thermometer.) Allow it to cool until just barely lukewarm, then beat with a wooden spoon until light and creamy, about 5 minutes. Scrape the thickened honey out onto a buttered marble slab or cookie sheet and then, with very clean, lightly greased hands, stretch the taffy into a rope. double one end of the rope back onto the other. Continue pulling and working the taffy until it is stiff and very pale. Cut into 1-inch pieces and wrap in wax paper.
(I've never made taffy so I don't know if it's easy or hard but it sounds fun, and the ingredient list couldn't be simpler!)
